Mara's Chicken Barley Variety Soup


4 boneless chicken breasts
1 large can chicken broth
large can water
3 medium carrots, peeled and diced
1 medium onion diced
2 stalks celery diced
cup barley

Add 4 boneless chicken breasts to chicken broth and water. Place lid loosely on pot.

Cook over medium to low heat until chicken cooked, approximately 45 minutes.

Remove chicken and set aside to cool. Dice vegetables while chicken cools.

Strain liquid to remove residue and return to pot.

Shred cooled chicken by hand into bite-sized pieces

Put shredded chicken, vegetables and barley into the liquid

Sprinkle with black pepper to taste.

Simmer soup (loosely covered) for approximately 1 hour until barley and carrots are cooked.

Serves 6 – 8. Sometimes nice to squeeze in fresh lime when serving, if you like such a thing.

Freezes well.
