Taffy Apple Salad


1 can (8 oz) crushed pineapple in its own juice
cup sugar
1 Tbs flour
2 Tbs vinegar
4 cups apples, unpeeled (4-6 apples)
2 cups peanuts
1- 8oz tub of cool whip

In medium saucepan, lightly beat one egg with a small whisk

Mix in sugar, juice from pineapple, flour, and vinegar

Heat mixture over medium heat until it thickens and bubbles, stirring frequently

Set this mix aside to cool while prepping other ingredients.

Chop peanuts and put into large mixing bowl.

Dice unpeeled apples and add to peanuts

Add drained crushed pineapple to peanuts and apple mix

When sauce has cooled, add Cool Whip

Add the sauce mixture to apple, peanut and pineapple mixture. Mix thoroughly.

Refrigerate over night.

Recipe may be doubled if you are having a great big party!
